Jonathan Tam is chef owner of restaurant Jatak in Copenhagen. Jatak opened in January this year and is already one of the most talked about, fully booked restaurants in Denmark. Jonathan is former head chef at Relae, and before opening Jatak he worked at Residence at Stone Barns in New York. During the interview Jonathan talks about growing up in Edmonton, Canada.
